Thats what I call these delicious scrumptious sweet potato treats.  I used to make this for my family for dinner and then eat the left overs for breakfast.  Unfortunately, for me, my family eats it all now! Everyone loves these.  The recipe is simple.

 

Ingredients:

  • 4-5 Sweet Potatoes
  • Olive Oil or coconut oil (I like the flavor of olive oil but coconut oil is probably healthier)
  • 1 teaspoon cinnamon (add more to your liking)

Directions:

  1. Cube the sweet potato.
  2. Cover with olive oil mix it well so it covers all of the potato.
  3. Sprinkle cinnamon over the top. Mix well so the cinnamon covers the potatoes evenly.
  4. Bake covered for 45 minutes at 400 degrees.
  5. Take cover off and bake for 10 more minutes so the top can be a little crispy.

Then there you have it!  No sugar added and these are filled with lots of great nutrients.

  • vitamin A (in the form of beta-carotene)
  • vitamin C
  • manganese
  • copper
  • pantothenic acid
  • vitamin B6
  • potassium
  • dietary fiber
  • niacin
  • vitamin B1
  • vitamin B2
  • phosphorus

Which for Hashimoto B vitamins are great!

Cinnamon is great as well! Has a high source of antioxidants and anti-inflammatory properties.

Since sweet potatoes have natural sugar in it so if you are trying to lose weight then you may want to keep these out of your diet or just consume them before 12pm.

I dont want to bore you with all the in between.  I have changed my diet a little bit over the years because I was nursing one child with lots of allergies so I did lose some weight in between.  But this next picture is a set of pictures before and after I started the anti-inflammatory diet

I never really cared to lose weight in 2015 I really just wanted to feel well again.  I don’t have a ton of pictures from long before because I hated how I looked because of all the weight i gained with pregnancies.  Most of this weight loss was in the matter of 3-4 months because most of what I had was inflammation.  My stomach went down a ton.  I always looked 5 months pregnant.

YOUR GOAL SHOULD NEVER BE TO BE SKINNY RATHER IT SHOULD BE TO BE HEALTHY!

THAT WAS MY GOAL WHEN I STARTED THE ANTI-INFLAMMATORY DIET!

I was diagnosed with Hashimoto about 1.5 years ago.  Since then I have drastically changed my diet.  I wasn’t ready to start thyroid medicine thought there had to be another way so I began my research.

Hashimoto is so difficult because there is no cookie cutter diet.  What works for one does not work for all.

The only cookie cutter part about Hashimoto is that you MUST go Gluten free and dairy free.  Everything else is questionable.  Should you be grain free?  Should you be Lectin free?  Should you be nightshade free? These questions you need to find the answers on your own.

I went through a diet program that allowed me to remove everything out of my diet and then add things back into my diet.  I know what causes inflammation and what doesn’t.  What makes my stomach feel sick and what doesn’t.  And sometimes I decide that it is worth feeling sick just to have a taste.  You have to listen to your body!

I am due for full labs at my doctors office so I will soon find out how everything is.  I recently had my TPO’s checked and a year and a half ago it was 4 and now it is 1.  Which is kinda a big thing!  They use TPO to measure whether or not you have a thyroid autoimmune disease.  So this is a good finding.  Although Im certain my numbers are still off elsewhere.  Things such as my thyroglobulin antibodies Im sure is still up.  My thyroid antibodies was cut in half when I went gluten free.  So There is definitely proof in the pudding that going gluten free is a MUST! At least to start!

Its hard and nobody knows how hard it is to change everything about your diet.  I can tell you first hand that you can do it.  It is possible!

No more going to parties and eating the junk food.

No more grabbing food at a fast food chain for a quick bite.

No more yummy cookies at the Christmas parties.

BUT TRUST ME YOU CAN DO IT!

Ingredients:

Organic Strawberries, Organic Juice, Fresh Banana, raspberries or other berries

Blend until you have a smoothie and pour into a bowl.

Toppings:

Gluten free granola (i am grain free so I do not add this), cashews, coconut shreds (unsweetened), more fresh banana, drizzle honey over the top.

(I only do this every now and then because of the amount of sugar.)

 

Once you have the diagnosis of Hashimoto it is hard to decide what doctor to go to.  The MD just want to put you on thyroid medicine and some alternative medicine doctors are not as good as others.

Let me go back.  First when I got my diagnosis I didn’t believe my MD.  This MD is a practicing DO (Doctor of Osteopathic).  DOs practice a “whole person” approach to medicine. Instead of just treating you for specific symptoms or illnesses, they regard your body as an integrated whole.  So from the beginning I was at a good place.  I was very fortunate because most doctors would have over looked these labs since I am still in range on my thyroid.  The only things that showed up were thyroglobulin antibodies which were at 32, high dhea and high estrone levels.  It was then that my doctor told me to go gluten free.  So I did.  I went back to recheck to see it going gluten free lowered my antibodies.  It was cut in half! it was now at 16.  I was shocked that it went down that much from just going gluten free.  My DO was definitely on to something.  Then it was just kinda left there.  So now what? I lowered my antibodies.  But then that was it.  The doctor didn’t know why dhea was high and didn’t know why my estrone levels were through the roof.  So I continued on with my life until my dental work began.  (more about dental work and hashimoto here Hashimoto dental work)  That was when I realized I do in fact have Hashimoto. I thought if I go back to the DO then they will want to put me on medicine because I began to feel symptoms.  I try to steer away from medicine as much as possible… unless it is absolutely necessary.  So I decided to got the Alternative Medicine route.

One more note about my DO.  She was like no other.  Most doctors would excuse my labs because they were still within range.  She didn’t.  She referred me to an endocrinologist and told me that I had Hashimoto.  Had I gone anywhere else I probably would have never been told this.  I was very blessed to have found out early on before i even had symptoms.

Going to the alternative medicine doctor I did not know how much it was going to cost but I went anyway.  I have a dear friend that also has Hashimoto and she has had great success at this office.  So I went and found out how much it would cost and boy was it outrageous.  I then had to decide my health or worry about how much things will cost.  So I paid the bill and went with a 6 month program to try and heal myself.  I learned more about myself with this doctor then I ever knew before.  There was a set of labs that he had me do.  Then there was a list of labs that he wanted me to get tested with my MD (h.pyloir, celiac, anca antibodies and asca antibodies).

I found out that my DO was no longer at the office so now I had to see someone else.  I was a little nervous only because I knew my DO would test anything my alternative med doctor asked.  I walked in there and explained to the new doctor that I had been working with an alternative medicine doctor and and wanted to work together with her and him to get on top of my health.  She was ok with it.  So she ran all the requested labs.  I was shocked! I was very thankful but shocked because most doctors would no test because I do not have enough symptoms.

So to answer the question alternative medicine doctor or MD.  I say both! You can use them together to get on top of your health.  MD’s that will work with an alternative medicine doctor are hard to find.  I hear so many stories about people with Hashimoto and how their doctors claim they make up symptoms and won’t run labs etc.  I am thankful where the Lord lead me.

But decided to give it a try anyways!  It definitely is not a weight loss program.   Although the diet you go on you do drop weight.  But lots of the weight you drop is inflammation.

 

 

A few months back I went to the doctors for a routine check up.  I hate going to the doctors and would have never gone to this appoint before.  My husbands work now required for us to get lab work to keep our insurance at a lower cost.  So for obvious reasons I went.  When the labs came back the doctor wanted to go over them with me.  That was where she found that I in fact do have an problem.  She explained to me that my thyroglobulin antibodies were high.  They were suppose to be less than one to be normal and well mine were at a 32.  She explained to me that I needed to look up Hashimoto.  So I went home that day and looked up what Hashimoto was.  Basically Hashimoto is a thyroid disease (hypothyroid).  I thought to myself… No, theres no way that I could have this I don’t have any symptoms.  I don’t gain weight, I don’t have a hard time losing weight, I don’t have any of the symptoms listed on the list.  So i continued on.  The doctor did recommend to go gluten free so I decided to at least do that.

I began to think… I wonder if the Hashimoto was showing up because I have dental bacterial infection in my bones underneath the root of my teeth.  I have known about this for years but never did I want to pull all my front teeth out.  So I didn’t.  When I thought there may be a correlation I decided to take care of all my dental problems.  I went to one dentist that wanted to just pull the teeth out.  Then I went to another dentist that said he would be willing to retreat the teeth.  So I definitely opted for that option.  I am 36 years old who in their right mind wants to pull out all four of their front teeth and go about a year without front teeth (they are the four front bottom).  So I began the treatments.  When I had a total of 4 teeth that had to be retreated.  I would do it one tooth at a time.  The dentist I go to uses ozone therapy which is an amazing natural way to kill bacteria.  After treating the first tooth I got an infection in my mouth from all the bacteria that was released.  So the doctor prescribed some antibiotics.  I took them.  But they did not help.  I decided to eat raw garlic.  Since I know that has helped in the past.  And sure enough the infection would melt away seconds after chewing the garlic up.  So each time I had a tooth taken care of that was my regiment.  I would began chewing garlic about 4 times a day until the infection would go away.

I had begun to feel run down, tired, achey, and had candida issues.  I had the worst candida infection I have ever had in my whole entire life.  I thought to myself… Maybe I do have Hashimoto (up to this point I was still in disbelief).  So I began to realize I do intact have Hashimoto and I am having symptoms of Hashimoto because of the dental retreats.  So I needed to do more than what I was currently doing to get my health back into check.  I decided to go see a doctor out in Costa Mesa California who deals with autoimmune diseases and especially focuses on Hashimoto.  I DO IN FACT HAVE HASHIMOTO and my DENTAL WORK did cause a flare up.  What i realized is that my dental problems are not causing Hashimoto but my Hashimoto has probably caused my dental problems.

 

 

My friend Alex is always telling me I need to blog.  I always say “I don’t have enough time.”  I have so much information that is tied up in my brain here from experience or researching.  I have gone through quite a bit and it would seem so difficult to try and go back to write down everything that I have discovered about my health and my families health.  I am going to try and appease Alex and write things down from now on in hopes to help others out.

To tell you a little about myself.  I am a mother, wife, pastors wife, homeschool teacher, professional photographer, and a follower of the Lord Jesus Christ.  My days consist of wiping noses, cooking, playing taxi and watching softball/baseball games.  So needless to say I am a pretty busy woman.  I hope to be able to actually be faithful to this blog here.  So here I go Alex!
